چکیده

Goat milk has become a popular item of human consumption due to its originality. Enterococci are ubiquitous bacteria, and they can also be found in traditional dairy products. This study focuses on the safety enterococci from Slovak raw goat their susceptibility lantibiotic bacteriocins durancin ED26E/7, which not previously been studied. Biofilm formation ability enterococci, virulence factor genes, enzyme production antibiotic profile were investigated. Samples (53) collected 283 goats Slovakia. MALDI-TOF mass spectrometry identified three enterococcal species: Enterococcus faecium, E. hirae mundtii, with dominant occurrence species faecium. Low-grade biofilm (0.1 ? A570 < 1.0) was four strains Gelatinase, hyaluronidase, aggregation substance surface protein genes absent these enterococci. Gene efaAfm (adhesin) detected five faecium strains. However, it biofilm-forming have pathogenic potential; even produced high amounts useful ?-galactosidase. The susceptible bacteriocin treatment ED26E/7 as well, represents original information production.

Characterization of Enterococcal Community Isolated
from an Artisan Istrian Raw Milk Cheese: Biotechnological and Safety Aspects.

In this study, prevalence, biotechnological and safety profiles of 588 Enterococcus isolates isolated from raw milk and Istrian cheese during different stages of ripening were analyzed. Despite the low and variable presence of enterococci in milk ((3.65±2.93) log CFU/mL), highly comparable enterococcal populations were established after 30 days of cheese ripening ((7.96±0.80) log CFU/g), confir...
